Chocolate Lunchbox Slice

 

This slice is ridiculously simple to make and is an every occasion snack. It’s easy but effective and above all else - it’s super delicious!

This recipe is a staple from my Mutti’s pantry which she passed down to my mum. We had this regularly as a lunchbox treat. I have tweaked the recipe from the original and it’s still just as tasty.

Makes 1 slice

The Slice

  • 1 cup flour

  • 1/2 cup sugar

  • 1/2 cup desiccated/shredded coconut

  • 1 Tbs cocoa

  • 185 g butter

  • 1 tsp instant coffee powder

  • 1/2 cup oats

  • 1 tsp baking powder

  • salt

The Icing

  • 1 cup icing sugar

  • 2 Tbs cocoa powder

  • 30 g butter (softened)

  • 1 1/2 Tbs hot water

  • coconut or 100s & 1000s for sprinkling

To make the slice

  1. Preheat the oven to 180’C (I use a fan forced oven)

  2. Prepare a lamington tin (20 x 30 cm) with baking paper

  3. Melt butter.

  4. In a medium bowl place dry ingredients and using a wooden spoon mix to combine.

  5. Add melted butter to dry ingredients and mix well.

  6. Press mixture into tin.

  7. Bake for 20 to 25 minutes. Remove slice from oven and place on cooling rack and allow to cool completely in tin.

To make the icING

  1. Place icing sugar and cocoa in a bowl and whisk gently to combine.

  2. Add butter and hot water into mix and beat with a spoon until spreadable consistency.

  3. Spread over cool slice and sprinkle with coconut or 100s & 1000s.

  4. Cut into even squares.

Notes:

*You can add other mix-ins as well as dark chocolate. Some of my favourites include dark chocolate and sour cherry, white chocolate and macadamia, walnut and banana

final thoughts…

I want holidays to last forever. It’s rude to go back to work for one day this week being a Friday. Is New Year’s a big deal?
