Single Serve "Healthy" Skillet Cookie
This cookie is a soft treat filled with yummy stuff for an anytime snack or after dinner sweet. Make it even better with a drizzle of nutella, dollop of peanut butter and a scoop of ice cream.
I make this cookie on the regular for an after run snack. I have intense sugar cravings after my runs and this has become a staple for me. It is relatively guilt-free (if you don’t add the ice cream) and above all it’s delicious! But honestly if you want a damn cookie, eat the damn cookie. Life is too short to worry about how many cookies you ate today.
Makes 1 skillet cookie (1 serving)
The Cookie
2 Tbs nut butter*
1 tsp vanilla bean paste
1 tsp instant coffee*
1 tsp maple syrup*
1 Tbs almond milk
1/4 cup almond non-diary natural yogurt*
1/4 cup oats
1 Tbs sweet potato flour/tapioca/rice flour
1 Tbs almond meal/flour
1/2 tsp baking powder
salt
80 g dark chocolate*
To make the cookie
Preheat the oven to 180’C (I use a fan forced oven)
Grease a 9 inch skillet pan with coconut oil.
Place wet ingredients in a small bowl and whisk until combined.
Using a wooden spoon or a rubber spatula fold the flours, oats, baking powder and salt into the wet ingredients. Add the dark chocolate until evenly distributed.
Place the mixture into the skillet.
Bake for 10-12 minutes, until lightly golden around the edges and gooey in the centre.
Serve with a drizzle of nutella and a scoop of ice cream or yogurt.
Notes:
*I use Mayver’s Dark Roast Crunchy Peanut Butter
*I used a packet of Before You Speak Coffee Caramel. You could substitute coffee for Matcha.
*Alter sweetner ratio depending on how sweet you like it. I added less because the coffee is sweet
* You can substitute yoghurt for banana or pumpkin puree
*You can add other mix-ins as well as dark chocolate. Some of my favourites include dark chocolate and sour cherry, white chocolate and macadamia, walnut and banana
